Drink Secrets....
Coca Cola, Pepsi and
more!
|
This
recipe is based on analytical tests and the findings of Joseph Merory,
a flavourist and president of Merory Food Flavours. We aren't telling
you this is the exact recipe, but it is probably as close as we
can get without Coca Cola revealing it to us
themselves.
The
following recipe produces about 1 gallon of cola syrup very similar
to Coca Cola.
Mix
2.4 kilograms of sugar with just enough water to dissolve it, (note
that you can substitute high-fructose corn syrup for half the amount
of sugar, although cola purists will tell you that this is detrimental
to the end flavour). Add 37 grams of Caramel, 3.1 grams of Caffeine,
and 11 grams of Phosphoric Acid, (the stuff that dissolves the coin
in a glass of Coke). Extract the cocaine from 1.1 grams of Coca
leaf, (though a check with state laws would be prudent here), with
Toluol, then discard the cocaine extract (wink-wink). Soak the Coca
leaves and Kola nuts (both finely powdered; 0.37 grams of Kola Nuts)
in 22 grams of 20% alcohol. Fortified California white wine was
used circa 1909 , but these days Coca Cola probably use a simple
water/alcohol mixture. After soaking, discard the coca and kola
and add the liquid to the syrup. Add 30 grams of Lime Juice (although
Coca Cola now deny this is an ingredient) or a substitute such as
a water solution of citric acid and sodium citrate at lime-juice
strength. Mix together 0.88 gram of Lemon Oil, 0.47 gram of Orange
Oil, 0.27 gram of Lime Oil, 0.20 gram of Cassia (Chinese Cinnamon)
Oil, 0.07 gram of Nutmeg Oil, and, if desired, traces of Coriander,
Lavender, and Neroli Oils, and add to 4.9 grams of 95% alcohol.
Shake well. Add 2.7 grams of water to the alcohol/oil mixture and
let stand for 24 hours at around 60º F. A cloudy layer will precipitate
out. Take the clear part of the liquid and add to the syrup. Add
19 grams of Glycerine (from vegetable sources) and 1.5 grams of
Vanilla extract. Add water to make up 1 gallon of syrup.
This,
added to carbonated water as a flavour, will make 128 6.5 oz bottles.
Well, after
reading what goes in to colas, we hope you enjoy that next long
cold glass. Personally, we think we will just let Coca Cola do all
the hard work and go buy a can or two. We hope you do the same.
